Carrot Bacon

Ingredients
- 2 tablespoons avocado oil
- 2 tablespoons Maple Grove Farms® 100% Pure Maple Syrup
- 2 tablespoons low sodium soy sauce
- 2 teaspoon Wright’s® Hickory Liquid Smoke
- 2 large, thick carrots, sliced ⅛-inch thick
Directions
- Combine oil, maple syrup, soy sauce and liquid smoke. Pour over carrots. Marinate at least 30 minutes.
- Preheat oven to 400°F. Arrange carrot strips in an even layer on parchment-lined baking sheet. Bake for 15 to 20 minutes or until desired doneness.
Tip: A mandolin works really well to evenly slice the carrots into strips. If you don’t have a mandolin, you can hand slice or try using a vegetable peeler. If the strips are thinner than 1/8 inch they made need less cook time.
