red skin potatoes
Wright's® Mesquite Liquid Smoke (May substitute with Wright)
medium green pepper (chopped)
red onion (chopped)
Regina® Red Wine Vinegar
ground black pepper
In a saucepan, combine potatoes, water and 4 teaspoons of Wright's® Liquid Smoke. Simmer for 30 minutes or until fork tender; drain. Cool; cut potatoes into cubes. Combine potatoes, pepper and onion; set aside. Blend mayonnaise, remaining 2 teaspoons hickory seasoning, mustard, vinegar, garlic powder and pepper, stir into potato mixture. Cover; chill at least 2 hours to blend flavors.
