Hearty Potato Salad

Potato salad with onions, peppers, mustard and spices.

Ingredients

  • 2 lb. red skin potatoes
  • 3 qt. water
  • 6 tsp. Wright's® Mesquite Liquid Smoke (May substitute with Wright)
  • 1 medium green pepper (chopped)
  • 1/2 cup red onion (chopped)
  • 3/4 cup mayonnaise
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. Regina® Red Wine Vinegar
  • 1 tsp. garlic powder
  • 1/4 tsp. ground black pepper

Directions

In a saucepan, combine potatoes, water and 4 teaspoons of Wright's® Liquid Smoke. Simmer for 30 minutes or until fork tender; drain. Cool; cut potatoes into cubes. Combine potatoes, pepper and onion; set aside. Blend mayonnaise, remaining 2 teaspoons hickory seasoning, mustard, vinegar, garlic powder and pepper, stir into potato mixture. Cover; chill at least 2 hours to blend flavors.
